Meet The Team
Leigh
Leigh Scantlin is the founder of Stoneleigh’s and spent many a year in Cobham as a child visiting his grandparents in Downside.
Why the name Stoneleigh’s? Leigh’s sister played in an orchestra called Stoneleigh’s as a child, then the grandparents downside bungalow was crowned with the same title and so Leigh thought “if I ever open a butcher’s it would be nice to call it Stoneleigh’s” and so he did.
If you ask Leigh why he loves butchery you’ll see a glint in his eye as his face lights up with pride. “There is so much trust invested by people in what I do for them as a butcher. A butcher’s trade is steeped in English heritage, it dates as far back as 1272 when butchers were regarded as some of the most important people in the country. That’s a pretty amazing thing.”
Leigh favourite cut of meat?
Will travel far and wide for the ultimate steak, his favourite find so far is Smith & Wollensky NYC (quite a long way to walk!) luckily they have now opened in London www.smithandwollensky.co.uk but his true favourite meat is shoulder of lamb, slow cooked, full fat for full flavour.
Jon
Without Jon’s belief and passion, Stoneleigh’s of Weybridge simply would not have happened. Jon is one of the most stand-up and true guys you will ever meet. Jon’s vision and commitment for providing an exceptional service is second to none. He truly loves being a butcher and is massively experienced with a wealth of knowledge regarding farming, rearing and rare breads.
Jon’s Favourite Meat
Simplicity is genius for Jon, a butterflied leg of Welsh Salt Marsh Lamb cooked on an open flame served pink with a homemade rosemary and balsamic dressing.
Ross
(The Real Ross of Stoneleigh’s)
At last!
We first met Ross three years ago and instantly fell head over hills with him!
We made our pitch but due to various complications a move to Stoneleigh’s just wasn’t posable in the summer of 2017.
Come October 16th 2020 we finally got our man and we couldn’t be more chuffed.
Ross comes to us with a fantastic heritage having completed The Butchers Guild Apprentice scheme and has worked in some Top Butchery outfits including Lidgates of London.
Ross is a top-level butcher and more importantly is a top person who has fitted in perfectly.
Despite his huge wealth of knowledge regarding all cuts of meat, Ross is a simple chap and goes absolutely crazy for a chipolata Sandwich! He’s also quite partial to a Sirloin on the Bone.
BARNEY
Having worked as a butcher for the last 5 years Barney is the newest member to the Stoneleigh’s team. Barney’s more than passionate when it comes to butchery and cooking, he’s a massive benefit to Stoneleigh’s and has fitted in like a dream. Barney’s a proper foodie, he loves cooking and brings a wicked energy to the shop. Barney’s always more than willing to give a cheeky cooking tip and share his knowhow especially when it comes to outdoor cooking. Barney also manages and personally cooks for all of our private events; you could say that he’s our BBQ expert.
Barney’s favourite meat
Anything on the barbecue!
Annette and Mike (Mum and Dad or nanny and grampsy)
It really is a family affair with the delightful Annette and Mike providing exceptional support to the expanding Stoneleigh’s brand. You will find it’s all hands-on deck for busy weekends and Mum has made nearly every single Stoneleigh’s kabab ever sold! Dad runs the books, keeps us on our toes and he also has the tough job of keeping Leigh in check when he turns up late!
